Great Gift
Gave this as a gift to my brother in law for his engagement and he seemed to be really impressed by it and really like it.I did a lot of comparisons when looking for a knife set to purchase at this price range. While I _personally_ would have preferred a smaller set of better knives (say Shuns), it seems that most people prefer a more complete set - go figure. That being the case, as I looked around on Amazon, I didn't find many knife sets at this price range that didn't have "gaps" between the block and the knives; most sets had a block that had empty slots. I also liked the more contemporary and modern lines of the knives.As for the performance and ergonomics? I can't say - yet. But MOST people also aren't knife nuts like me and a set like this would perform as well or better than their daily use, stamped steel knives. Great knifes but cheap block!
I've lived in Europe most of my life and I know a good knife. These are excellent quality knifes! However I was quite disappointed by the quality of the block and the cheap looking emblem on the front. Doesn't even look like the picture on Amazon... and of course it wasn't made in Europe.

Excellent Knife and NOT high-priced!
This knife is such a value. I have always had a hard time accepting the high-prices on Wuesthoff or Henckel knives because I never felt the VALUE was worth it. Boy am I glad I held out for the Victorinox knife! This knife, also known as Forschner, is consistently sharp. Just a few swipes of the sharpening steel and its good as new again. I use this knife and a 6" every day. The handles are comfortable and do not get slippery when wet. They are practically the only knives I use. I wash and wipe dry after each use (NEVER put in the dishwasher). I think you'll be as pleased as I if you try this knife.

Fine standard chef at very reasonable price
The Forschner 40520 was rated as "best overall" in Cooks magazine in Fall 2004. Pretty good report card from "the" chefs magazine. It took top honors over several high end ($80 -$100+) Wusthofs and Henckel models. While they didn't claim that the Forschner was better at any one specific task or that the craftsmanship can stand up to the others (its blade is cut from a blank ribbon of steel, instead of a hand-forged one piece) they did say that its lighter weight was preferred by some of their testers and that it handled the basics just as well as more expensive models. I just took delivery of mine last week and I am putting it to the test. I can say that it arrives razor sharp...nice... and that it's fairly well balanced. The handle is made of a grippy composite that allows you to securely hold firm if wet or in akward positions. The handle is a little longer than others I've owned, maybe too long for small hands, but it is contoured so you can move up towards the blade for better...

Don't let the all-business black non-slip handles fool you. These are some fabulous knives.They don't have the thick back of most quality forged knives (these are stamped). They don't have rosewood handles. They're not made to pimp up your kitchen or match your mixer. They're made for cutting things, and they do this exceptionally well.The blades are exceptionally shiny steel, very similar to Victorinox's Swiss Army knife. Things don't stick to the blade much. Like Swiss Army Knives, they also have a comparatively thin back and very little 'wedge effect.' This means when you cut things, they don't fly across the room. You don't push. Forschner Number 1 Choice of Professionals
I purchased the 8 piece Forschner block set (plus the 7 inch Santoku), and highly recommend this set and the extra 7 inch Santoku which fits in the same block.The deciding factor for me were the comments by professional chefs and butchers on various web sitesincluding this one. The problem with purchasing individual knives is that the cases are very expensive (with shipping and handling the mark up over mfg cost must be 1000%?), but you just cannot have sharp knives loose in a drawer. The block is $30+ if you compare the piece part prices, and if you have small kitchen it uses the least space, further away from kids hands, less fiddly than the knife safes as well. As for what you get in the block set, it has just about the right combination of knives for me, the Santokuknife fits in one empty slot as well (thanks to reviewer who commented on that). Who is Victorinox?
Although Victorinox is known the world over as the creator of the Original Swiss Army Knife, the company started out in 1884 as a cutlery workshop. By the time company creator Karl Elsener delivered his first pocket knife to the Swiss Army, his cutlery business was already booming. Over the next century, Victorinox cutlery became a top-rated choice among professionals worldwide, with over 300 blades to offer.

What is a stamped blade?
A stamped knife can usually be identified by the absence of a bolster. Stamped blades are cut into their shapes from cold-rolled pieces of steel and then ground, tempered, and sharpened. Creating them requires many less steps than forging and results in lighter, narrower blades. Some professionals prefer the thicker, heavier forged blades, but many pros, who spend much of their day cutting and slicing, enjoy a lighter knife since it’s less fatiguing and easier to manipulate at speed.

Stamped knives are easier to produce and therefore less expensive. They perform very well and can approach the quality of a forged blade, but not the weight or feel. Victorinox manufactures a complete range of stamped blades with unique, patented Fibrox handles and they are considered among the greatest values in the knife industry.

What knives do I need to own?
Knife choice or selection is determined by many factors--size, function, style, and preference. The most important factor is function. Different knives have different uses. It is important to use the proper knife for a specific task, since proper knife selection and the use of a proper-sized, sharp knife make for safe cutting. General kitchen tasks and the knife to use for them are as follows:

Paring: The most common to own and use, a paring knife is generally for small cutting jobs and peeling of vegetables or fruit. The blade size is usually from three to four inches. Choose the shape and size to fit your hand. Since this is one of the more versatile knives, owning more than one is recommended.

Chef's: The most important tool and essential to every cook, a chef‘s knife is most often used in a rocking method to mince, dice, and chop vegetables and herbs. This one is known as the chef’s best friend.

Slicer: Most commonly used to slice meats, poultry, and seafood, the slicer is an important companion to any host or hostess.

Boning: As its name suggests, a boning knife is used to trim or remove meat and fish from the bone.

Bread: Designed with a special edge, a bread knife makes easy work of cutting through crusty bread, pastries, or any item with a crust and a soft interior.

Fillet: Most often used by pros and seasoned home chefs, the fillet knife is used to fillet meat and fish.

Cleaver: An important addition to any collection, a cleaver is often used to cut or chop through bones.

Santoku: This knife combines the features of a cleaver with a chef's knife. The curved blade helps the rocking motion used for chopping, and the wide blade works well for scooping sliced food off a cutting board and for crushing garlic. The santoku can also be used to slice meat and has a narrow spine for making thin cuts.

Utility: An all-purpose knife often referred to as a sandwich knife, the utility knife peels and slices fruits and vegetables, and even carves small meats.

Shaping: With its curved blade, a shaping knife is great for small precision cuts where control is essential, such as peeling, trimming, or garnishing.

What are the different knife edges and what do they do?
Straight: The vast majority of Victorinox knives come with a straight or fine edge. This means it has a perfect taper along the blade and no serrations. It is designed to cut without tearing or shredding.

Serrated: An edge designed with small, jagged teeth along the edge.

Scalloped: A blade with waves along the edge generally used to cut breads with a hard crust and soft interior, as well as tougher-skinned fruits and vegetables.

Granton: This edge has hollowed-out grooves or dimples on the sides of the blade. These grooves fill with the fat and juices of the product being cut, allowing for thin, even cuts without tearing. Even with the grooves, these are still straight-edge knives and can be honed with a sharpening steel.

How should I care for my cutlery?
After use, knives should not be allowed to soak in water. The best practice is to hand wash and dry them immediately. This is especially true if they have been used on fruit or salty foods, which may cause some staining, even on stainless steel. Most knives require very little maintenance and it is worth the effort to protect your investment.

Though Victorinox knives are dishwasher safe, this is strongly discouraged. The dishwasher’s agitation may cause damage. Additionally, harsh detergents can be harmful and cause pitting and spotting on the blades. The handles may also discolor and develop a white film with constant use of the dishwasher. Plus, intense heat associated with dishwashers is not good for the temper of the blade.

How do I keep my knives sharp?
All quality knives require proper maintenance to keep them in perfect cutting shape. The best of edges will quickly dull if it strikes metal, glass, or Formica. A wooden cutting board makes the best cutting surface. And, if a slip occurs, a proper cutting board is safer for the user. Frequent use of a Victorinox sharpening steel will keep blades in tip top working condition. All straight-edge knives need steeling to keep their edges.

How to ""Steel"" a Knife
1. Hold the steel firmly in your left hand with the guard positioned to stop the blade should it slip.
2. Hold the knife in your right hand and place on top part of steel as shown.
3. Raise back of blade one-eighth inch.
4. Now, moving the blade only, draw it across the steel in an arching curve, pivoted at your wrist. The blade tip should leave the steel about two-thirds of the way down.
5. Repeat the same action with the Blade on the bottom side of the steel. Always maintain the same pressure and angle on both sides of the steel.
6. Repeat five or six times.

When a sharpening steel no longer does the job, it’s time to take the knife to a qualified knife sharpener who will place a new edge on it. This, along with use of the sharpening steel, will give you many years of sharp, safe blades.

Please note that electric knife sharpeners can be harmful. They have to be used carefully as they remove too much metal, can harm the temper of the blade, and most important can change the factory-applied edge angle.

How should I store my knives?
Safety is the biggest concern of storage, both to the user and to protect the knife's edge. Choices include a knife magnet, knife block, drawer insets, and also individual knife protectors. Top to learn more

Still strong after a year of use.
These were given to me as a gift for Christmas 2007. Since then, we have used them for everything but steak. We cut up kid foods mostly. We also use them for peeling apples (not what they were intended for, but sometimes the right knife is dirty), opening packages, cutting fruit, lunch meat, pizza, chicken, salads, grapes, etc.These knives have stayed sharp even in the face of dishwasher use. They are flexible and durable.

Sharp Knives That Represent a Good Value
We bought these knives sveral weeks ago and have used them enough that I feel comfortable posting a review now.As background, I should mention that I own a LOT of knives ranging all the way from the Traditional German Makers (Henckels; Wusthof) to the currently-popular Japanese knives (Shun; Global) to REALLY expensive handforged custom knifes from master knive smiths in the U.S. and Japan.However, I like to use serrated knives for some things, like steak.The issue is that serrated knives are inherently disposable in my opinion. The serrated edge just cannot be maintained easily by the average consumer. These knives are often made using less expensive techniques like stamping, rather than forging. I have owned some relatively expensive serrated knives that have lasted for many years, but eventually the edges get too dull and then it is time to replace them.Therefore I think one has to calibrate one's expectations for a serrated knife to...

THE best for the price
After searching stores looking for a knife set I began researching online. I found this set and was a bit reluctant. They didn't come with a knife block, they didn't have wooden handles, and the brand wasn't ringing a bell. But they were rated so highly, and the comments so positive, I decided to take a chance. They are AMAZING! Manufactured by the company that makes Swiss Army Knives, they are beautifully made. These three knives will do virtually anything you need done in the kitchen, so you don't really need more knives. They have excellent weight, good balance, and the grip feels ergonomic. While priced at the low end for good knives, you feel you are using the Mercedes of knives. This is a great set for anyone who loves cooking or quality. And as an aside, I was happy to have to find an alternative to the knife block. I got a strip magnet, and it is so much better!

Great knives
I just purchased this knife set for my son for Christmas, after reading good reviews. The knives have met all my expectations so far. They are very sharp, and the fibrox handles are substantial, non-slip, and comfortatble. The first test was 4 butternut squash my son volunteered to peel and cut up for Christmas dinner. Cutting hard squash is a task I don't look forward to, but the paring knife did the peeling, and the chef's knife did the chopping, with no problem. I then borrowed the paring knife to cut up an onion, and was amazed at how easily it went through the onion compared to the Chicago Cutlery I've used for years. For less than $50, I'm ready to buy another set for myself!

R.H. Forschner by Victorinox 3-Piece Fibrox Chef's Set, Molded Handles.I just got mine and love 'em! I've been through a few bargain knives; most recently low-end Henkles; the blades were thin, badly sized, and didn't stay sharp long. I expected a little better but was pleasantly surprised! The look of them is professional but basic, not a showy knife, but they are much better than anything I've seen retail at comparable prices. They're an excellent weight and above par materials. I used all three knives immediately and they performed extremely well. The handles fit the hand comfortably and knuckles never knock the cutting board. The material of the handles is excellent. When cooking, my hands are damp but my grip stayed secure. Vegetables practically slid apart and the slicing knife cut bread with no tearing. Chef's best friend
Forschner is by far the best knife for the money. They always arrive razor sharp, and have the ability to hold an edge far longer than much more expensive knives. I purchased one for all of my line cooks as they are very durable and can be used to perform almost any task in a professional kitchen.The "sports mom" comment that it "felt cheap" was probably due to its light weight and composite plastic handle. To an untrained eye, it could be confused for a "cheap" knife, but after de-boning a chicken, slicing through a butternut squash, it still glides through tomatoes like butter and can perform the most surgical of cuts. The composite plastic handle has an amazing grip even when your hands are covered in duck fat, it won't slip.I own knives that can run up into the $1200 range, but still prefer this little powerhouse for everyday use. Forschner 7 Inch Santoku Knife - Agile and Reliable
The gets almost as much use in my kitchen as the . They both have the black Fibrox handle, which is very comfortable in the hand. They also each have a nice balance to the blade for extended use. The Santoku knife is a little shorter, making it slightly more agile for deboning or butchering. But the slightly greater heft of the chef's knife make it a tad better on larger jobs.The ridges on the side of the Santoku knife relieve pressure when slicing and dicing. A must have
The Victorinox Fibrox line of knives are all composed of the same high grade metal and well built handles. Cooks Illustrated did indeed rate these knives. However, this santoku was not one of them I believe. The article I read was of the chef's knife.I have tried many different santoku knives but this one feels the most at home. For me the handle is a little small but it's light. Deceptively light. You wouldn't believe how easily it can go through anything you put it against.The Granton edge does indeed help with food coming off of the knife. Unless you are chopping something that REALLY sticks to the knife, like I do many times.Even though I prefer the chef's knife version of this line, the santoku is probably the best one I've ever used. You won't be sorry that you bought this blade. And if you are... it only cost you around $30. Sure, it's no Ken Onion, but then again, it's not over $180 either. For the price, you just can't beat it.
